It's winter and somehow red wine just comes into its own – a dark hued sumptuous liquid, sending off deep aromas of berries as you slowly swirl your glass, holding it up in the firelight...

All you need to make this vision a reality is a wine that's been nurtured from grape to barrel then left for time to weave its magic and develop the wine's own personality and unique gravitas. A fine wine, no less.

Fifty years ago Bob Roberts set out to make just such wines, looking for regions similar to Bordeaux, the Rhone Valley and even Burgundy. The places that produced the wines he adored himself. Wines that would cellar and bring a quality and refinement to any occasion. And they had to be the best such wines at affordable prices.

Unlike James Halliday and Len Evans and others in his 'Bulletin Place' crowd who headed to the Hunter, Bob and his wife Wendy settled on Mudgee and established Huntington Estate, going on to cement a pre-eminent place in Australia's wine industry.

Fast forward to 2005 when Bob's neighbour and friend Tim Stevens took over Huntington Estate, vowing to keep the same philosophy declaring "My cellar is full of Huntington Estate and I'd be mad to change the style at all – particularly now I know all of Bob's secrets!".

Time is the true test of a wine and these are emerging now after four years of evolving into wines of complexity and elegance – the 2015 Huntington Estate 'Bin 25' Cabernet Sauvignon and the 2015 Huntington Estate 'Bin 18' Shiraz.

Bin wines are small parcels that offer an interesting difference from the core range and these are no exception, unveiling the terroir of of a single vineyard block, or even a couple of rows of the vineyard.

So, think about the firelight, get out your favourite red wine glass but make sure your entry is in first!
